Gran’s Old Fashioned Apple Pie

So I have to say that when it comes to the in-law department I have be EXTREMELY blessed.  I married in to a wonderful family and I love how we are all so close.  While Jon Luke and I were dating, I would always here stories of his childhood and I loved knowing that this family would soon become a part of mine.

The Christmas before we got engaged, his grandmother gave me a cook book of a combination of recipes from their side of the family.  It was so thoughtful and I love how I am able to go through it and test my own cooking skills on each one.  This year, we are spending Thanksgiving with my family so Jon Luke really wanted certain dishes made for our Friendsgiving last weekend.  We put together a homemade dressing (also from Gran’s cookbook) and this delicious “Old Fashioned Apple Pie.”  It was SO good!  I wanted to take a minute to share the recipe with you all because it was so easy and is perfect for upcoming holiday gatherings!

Gran’s Old Fashioned Apple Pie

Ingredients:

7-9 medium sized baking apples sliced thin (about 8 cups);  1 cup of sugar;  2 tablespoons of cornstarch;  2 teaspoons of vanilla;  1/2 teaspoon of cinnamon;  2 teaspoons of butter;  1 tablespoon of milk;  1/2 teaspoon of sugar;  1/4 teaspoon of cinnamon

Crust: 2 cups of plain flour;  1/2 teaspoon of salt;  1/2 cup of shortening (butter Crisco);  1/2 cup of ice water

Combine crust ingredients into a large mixing bowl and begin to mix with mixer, slowly adding the ice water.  Once the mixture is doughy, split in half and roll the first half out (on a floured surface) to about 1/8″ thickness.  Once ready, place into 9″ pie plate.  In another large mixing bowl, combine apple slices, 1 cup of sugar, cornstarch, vanilla and 1/4 t. of cinnamon, tossing to coat the apples.  Spoon mixture into the pie shell and dot the top with butter.  Roll the other half of the dough, and place on top of apples, pinching the edges together.  Slit the top of the pie.  Brush top with milk and sprinkle with cinnamon.  Bake at 425 degrees for 15 minutes then reduce heat to 350 degrees for 30 minutes.  Check to make sure your crust is browning lightly and you are good to go!  Enjoy your delicious pie!
